Taco Soup recipe

Anyone else have picky eaters?  How in the world did I get picky eaters???  The Hubs and I love most types of food.  These kiddos?  Not so much.

Oy.

We got home from church today, and I had no plans for lunch.  Ack.

I had ground beef, that was it.  So, what do you do when you don’t have a plan?  You start with the step that you know.  Cook the ground beef…and pray for inspiration as it’s cooking!  and it came!  Taco Soup to the rescue!

We are officially in Fall, so it’s definitely soup weather.  Yay!  Soups are easy for me, so I am grateful for that.

Here’s how it all came to be:

Dice one onion and saute in about a tablespoon of olive oil.  I added a bit of salt to them as they were sauteing.

Once the onion was translucent (5 minutes?), I added in the ground beef and broke it up with a wooden spoon.

While the ground beef was cooking, I put a couple of quarts of water in a large saucepan to boil.  When it came to a boil, I stirred in a couple of tablespoons of beef base – I avoid MSG, so bouillon cubes are not an option for me anymore.  I drained and rinsed a can of black beans and added it to the pot along with a can of chili beans and a can of diced tomatoes with green chilies with lime and cilantro.  Then I left that to simmer on medium heat.

I went back to the ground beef, removed half for another meal and added in onion powder, garlic powder, chili powder and cumin – til it looked right.  *facepalm*  Sorry about that – it’s how Mama taught me to cook – measuring is really only done in baking.  I let that cook together a bit, then added it into the saucepan (with heat still set on medium) – set a timer for 10 minutes, covered it, and walked away.

Ten minutes was enough time to clean things up and set out dishes for lunch.

When the timer went off, I dished it out and served it up with a plastic spoon (less mouth burning!), a dollop of homemade yogurt, and tortilla chips.  This yogurt is more like cream cheese – it got strained for a LONG time.  😉

I would show a photo, but it’s all gone!  This amount took care of a family of five for lunch…I say five because ACE refused to eat it.

  • one onion
  • olive oil
  • 1 lb gound beef
  • beef base
  • 1 can seasoned black beans
  • 1 can chili beans
  • 1 can diced tomatoes with green chilies with lime and cilantro
  • spices/seasonings – onion powder, garlic powder, chili powder, cumin
  • Greek yogurt
